The Dinner After

Is there a dinner more wonderful than leftovers?  All the work is but a memory!  You can enjoy a holiday meal without being exhausted.

Unfortunately, the asparagus didn't reheat as well as I'd like.  They ended up a little limp tho still tasty.  The twice baked potato was already put together but not baked twice yet until this afternoon. The ham is more delicious today.

I may have to freeze some of the ham. There is quite a bit left over (even after sending some home with my daughter). I think I'll freeze it in meal portions and can either use it in a quiche, a hash brown casserole, soup, or just as is.

I could never have too much Berried Treasure pie!  There are two slices left, one for me and one for my husband. ♥

    1. Billie Jo, was it terribly crowded? I avoid restaurants on holidays for often the wait is long and the service poor.

  3. I agree, I can usually enjoy the leftovers much more after making a big meal, I usually do everything by myself and it takes a bit out of you.

    1. You are right, Connie. It takes a lot out of you. I try to wash all the bowls or pans or utensils as I cook so as not to have tons of dishes afterwards. I'm pretty tired when it's time to eat.

  4. I do enjoy leftovers from big meals. We sent some of the ham home with our children, but there's still plenty left for a few meals. And alas, there are too many potatoes. I can see some potato soup in the menu for this week.
    Glad it all went well for you, keep enjoying those leftovers.
