More Zucchini Delight

Earlier this week, I posted a recipe that I had made for tasty zucchini boats.  It was delicious but a lot of work to prepare.  As I am still tired from watching little Sam this week, I decided to make an easier zucchini dish.

Using my crockpot, I cooked meatballs, tomato sauce, garlic, and herbs on high for two hours and then on low for a little more than two hours. I sliced a large zucchini (not monstrous but still a good size) into about 1/4-1/2 inch slices and added them to the crockpot. I turned the heat up on high for about fifteen minutes, checked to see if they were tender, and then added mozzarella cheese on top of everything.  The cheese melted in about five minutes and then it was ready to serve and eat.  LOVE it!  Simple and Delicious!

    1. Billie Jo, If I am going to use the freshly picked zucchini in a day or two, I will just leave it out on the counter but if longer, I will put it in the refrigerator until I need it. I hope you enjoy this recipe!

  2. Your zucchini recipes sound delish. Sometimes when I am being a bit lazy I chop them up along with tomatoes and onions and cook them over a low heat. We enjoy them as a vege with our main meal or over toast for a snack. I might try sprinkling them with cheese next time as well.

  3. I use my crock pot quite frequently and now that I am needing to be away from home several days a week I will probably use it even more. Your zucchini dish that you prepared sounds really yummy!   4. Another delicious zucchini recipe, thank you, Gina. I am afraid I let my crockpot go a long time ago. Perhaps I should purchase another.

    1. Kim, I had one ages ago that died from using it too much. The newer ones aren't very expensive and definitely easier to use. I bought this one shortly after we moved a few years ago.
